The royal oil is characterized by coming from a type of olive, the royal one, with very little yield, but of great quality and value.

At present, there are around 2,000 hectares of Royal olive grove, located between the regions of Cazorla and Quesada. A production of only 5% of world production.

Characteristics of the variety: The most striking feature of the royal olive is its remarkable size and the reddish color, really appetizing, of its oval fruit. Despite the high production of these olive trees, their yield in oil is low and their collection is somewhat complicated by the brittleness of their wood and the resistance of the fruit to detach from the branch.

Pairing

The versatile characteristics of Royal olive oil make it really versatile in terms of combinations. It is recommended as a base of raw sauces to which it can transmit its nuances of flavor, but it is also a fantastic seasoning in bread, salads and vegetables, grilled vegetables, pasta, blue fish such as cod, carpaccios and tataki tuna, salmon and seafood, as well as in longer cooking stews.
